Easy-to-cook steak cut from the sirloin with a small center bone. Fat rind along the edge for folks who want the extra flavor, but a leaner cut overall. Throw these steaks on the grill or sear in a hot skillet and finish in the oven. They're cut a bit thinner (about 1") than our regular pork chops so they're a nice quick cooking steak for a weeknight dinner.
