Microwave Savory Egg Custard

An easy savory breakfast dish. Top with soy sauce, scallions, sesame oil, sesame seeds, or any other toppings you can dream up. And you can make it in the microwave! You can also use a metal or bamboo steamer by just placing a ramekin with the custard in the steamer basket.

Ingredients

  • (4-5) HV fresh pasture-raised eggs
  • (1.5-2x volume of eggs) Dashi, broth or water
  • (2 teaspoons) soy sauce
  • (1-2 teaspoons) agave syrup

Directions

Crack the eggs into a liquid measuring cup. add 1.5-2x the volume of eggs in your choice of dashi, broth, or water. Add soy sauce and agave. Use chop sticks or a whisk to mix until well combined. Microwave on 30% power for 8 minutes or steam for 10-14 minutes depending on the size of your dishes.
